Maple sugaring in New England is a centuries-old tradition, and we were happy to take part in it at Middlesex. When the sap began to run in early March, biology and environmental science teacher Willy Hutcheson grabbed his tap and set about collecting sap from seven trees around campus. About 100 gallons of sap and many hours of boiling later, Mr. Hutcheson had produced two and a half gallons of syrup. This past weekend, Mr. Hutcheson and the Middlesex environmental group, Common Sense, sponsored a Tap to Table brunch for the Middlesex community. Diners enjoyed organic waffles made with eggs from the Arnold family farm (Emily '16) and topped with Middlesex syrup!
